*This position is located in Southern California* * Will assist the Management team with opening and closing procedures as needed. * Prepare a variety of meats, seafood, poultry, vegetables and other food items in broilers, ovens, grills, fryers and a variety of other kitchen equipment according to restaurants standardized recipes. * Complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures. * Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period. * Portions food products prior to cooking according to standard portion sizes and recipe specifications. * Maintains a clean and sanitary workstation area including tables, shelves, grills, broilers, fryers, pasta cookers, saut burners, convection oven, flat top range and refrigeration equipment. * Prepares item for broiling, grilling, frying, sauting or other cooking methods by portioning, battering, breading, seasoning and/or marinating. * Follows proper plate presentation and garnish set up for all dishes. * Handle, store and rotate all products properly. * Perform other general duties as required * * _Opening_ * Unlock and unsecure the caf as required * Make sure FOH/BOH is ready for opening * Turn on appliance as required * Make sure food is stocked on the line as required * Make sure food prep and assignments are planned out * Make sure register is ready * Work with management staff on food inventory * Work with management staff on Caf supplies * Be able to work FOH/BOH as needed _Closing_ * Make sure all monies accounted for * Make sure food prep for the next day is complete * Make sure the caf is cleaned to health department standards FOH/BOH * Make sure Trash has been thrown out * Make sure all kitchen appliances are shut down as required * Make sure oil is changed out or strained as required * Make sure all foods wrapped, sealed, and stored appropriately * Make sure all dishes have been cleaned and stored * Be able to lock up and secure the caf as required * * ADDITIONAL SKILLS: * Must be able to work in a fast-paced environment * Must take the initiative to excel * Must possess organizational skills * Integrity and good work habits required * Must have a positive attitude as well as service oriented * Good oral and written communication skills * Ability to follow the directives of Director/Supervisor * Must be able to accept constructive criticism when necessary * Must have the willingness and desire to learn * Detail oriented * Must work safe and professional at all times * Ability to work as a team member * Ability to keep the department OSHA/Health Compliant * Knowledge of all company policies and procedures, e.g., safety * Ability to contribute _hands on_ QUALIFICATIONS To perform this job successfully, an individual must be able to perform each essential duty satisfactorily.
