Follows standard practices and procedures to comply with regulatory requirements.Duties and responsibilitiesPerforms duties of cooking, baking and food pre-prep to produce meals for department operations.Reviews menus, pre-prep sheets and special functions list daily.i Ensures pre-prep is complete and food items are thawed according to schedule.Organizes supplies and equipment in work area for cooking, baking and salad preparation.Monitors produce, prepared salads and other items to make sure they are rotated to reduce waste and offer variety.Reviews latest census to determine food production needs.i Follows up with supervisor to adjust production order to meet demand.Follows standardized recipes to prepare food in a routine and consistent manner.i Prepares, cooks and assembles food following standards of food production.i Evaluates the outcome.Maintains patient index of diets with the most current census report and diet orders.i Follows NPO orders.Performs daily cleanup and sanitizing procedures for stove top, microwave, countertops, carts, equipment used and work areas.Completes floor care duties daily, sweeping, mopping kitchen, storage areas and cafeteria.i Sets out wet floor signs.Collects trash from all garbage cans and disassembles boxes.i Takes to the outside dumpster.i Follows infection control guidelines.iPerforms duties to provide quality foodservice and accurate accounting of all meals provided.Follows procedure for setting up steam tables and is prepared for tray line.Assures that meal counts are recorded on the census sheet and entered into Revel system.Performs temperature test of food prior to meal service to assure proper temperatures are met.i Temperatures are recorded with accurate temperatures at the time takenEvaluates food appearance and taste.i Provides garnished food items and plates to insure appealing presentation.Follows diet orders and restrictions.i Modifies tray according to patientis special needs and special requests.Follows guidelines established for standard portions.Assures that leftovers are properly labeled, dated, and stored.i Utilizes leftovers.Communicates any spoiled or unattractive food, defective supplies or equipment.Communicates food and supply ordering needs to dietary manager by recording items needed on the designated log.Provides prompt and courteous service to all cafeteria patrons.i Assures portions are equal and consistent to all customers.Performs employee relations functions effectively to promote a positive work environment, influence retention and enhance communication.Acts as a mentor to new employees.i Represents the department and hospital in a positive manner.Assist with training in an effective and thorough manner to build confidence and assure positive outcomes.Communicates effectively among staff to promote a positive work atmosphere.Performs all aspects of position in a compliant manner, following all applicable state and federal regulations.iFollows policies and procedures, standards and practices in food storage, preparation and food handling.Follows infection control guidelines for food safety by wearing proper attire, hair restraint, and practices good hygiene.Demonstrates good hand washing practices.i Wears foodservice gloves per guidelines.Maintains standards of sanitation.i Keeps work areas clean and sanitized.i Wipes up spills from the floor.Follows infection control by wearing dish gloves while cleaning up soiled dishes/trays.Ensures accurate and timely deductions by processing appropriate payroll deductions and credits for employee benefit coverage.All other duties as assigned.Qualifications:iHigh School Diploma or GED Equivalent, Associate degree preferred.Certified ServSafe Food Handler.Ability to read, speak, write and follow routine oral and written instructions in EnglishAbility to understand and follow
